Plant Based Nachos

I’m not sure if you know this about me, but…
I reversed numerous health issues and lost 50lbs eating nachos like these…quite often. Let’s be honest: when that craving for chips and salsa hits, it’s hard to say no. But why say no when you can make a healthier version that’s 10x better? I made sure never to deprive myself while getting on track and healthy. If I’m craving something that’s typically not good for me, I find a way to make an accessible, HEALTHY version of it. So here we go…

Ingredients: Makes 1 Serving

  • Your favorite oil free tortillas - Take a small stack (Maybe four and cut into 8ths)

  • Black Beans - as much as you want

  • Corn - as much as you want

  • Avocado - I use 1/2 if I’m making 1 serving

  • Healthy Vegan Mama cheese sauce

  • Oil Free Salsa

Instructions:

  • Bake your tortilla chips at 350 degrees on a nonstick baking dish, or use parchment paper if you need to. Only takes 5 minutes to bake. You can also air fry, but make sure you are shaking the basket every few minutes so the chips don’t clump together.

  • Add your chips to a plate and add your topping.

  • Serve and enjoy!
