Edamame Crunch Salad
Ingredients: Makes about 2-3 servings
2 cups edamame, shelled (I get frozen)
1 cup of brow rice 9I get frozen)
Shredded salad mix (I like with purple cabbage and carrots)
2 chopped Persian cucumbers
1 tsp garlic powder
1 tsp onion powder
A small amount of chopped peanuts, green onions, and cilantro for toppings
Dressing ( 1/4 cup of low sodium soy sauce, juice of one lime, 1/2 cup pb2 powder - or real peanut butter - 2 tbsp rice wine vinegar, 1 tbsp maple syrup, water until a thin consistency.
Directions:
Defrost frozen rice and edamame
Chop salad and cucumbers
Add everything to a large bowl and top with cilantro, green onions, and peanuts.
Top with dressing and enjoy
