No Bake Cheesecake Bites
Ingredients: Makes about 6 servings
For the Crust:
1 cup pitted dates
1 cup walnuts (or substitute with 1 cup of no-added-sugar, no-oil bran flakes for a lower-calorie option)
For the Filling:
1 cup tofu (firm or silken—both work!)
1 cup unsalted cashews
¼ to ½ cup maple syrup (adjust based on sweetness preference – the dates in the crust already add natural sweetness)
1 teaspoon vanilla extract
Directions:
Make the Crust:
In a food processor, blend the dates and walnuts (or bran flakes) until the mixture becomes a sticky, crumbly crust consistency.
Press the crust evenly into six non-silicone cupcake liners in a muffin pan.
Make the Filling:
Blend the tofu, cashews, maple syrup, and vanilla in the same food processor until smooth and creamy.
Evenly pour the mixture over the crust in the cupcake liners.
Freeze & Serve:
Place the pan in the freezer overnight or for at least 8 hours to set.
When ready to eat, top with your favorite fruit! (I love using defrosted frozen fruit because it gets a little juicy!)
Enjoy right away or let them sit for a few minutes to soften for a classic cheesecake texture.
