10-minute Taco Bowl
Ingredients: 1 serving
Your favorite frozen non-starchy veggies
Frozen Rice (don’t have any? Freeze your own on the weekends)
Black beans
Frozen corn
Shredded lettuce
I - 2 tbsp salsa
1-2 tbsp your favorite vegan queso (I love Credo or you can make mine, just google healthy vegan mamas cheese sauce)
Optional Add-Ins:
A squeeze of lime for brightness
Chili flakes for heat
Fresh herbs like cilantro or green onions
Directions:
Throw it all in a pot (minus lettuce and queso)
Add lettuce to a bowl
Add rice, beans, and veggies
Top with vegan queso
