Fudgy Chocolate Cake

Ingredients: Makes about one serving - about 198 calories

  • ½ small sweet potato (about 65g)

  • 1 tbsp unsweetened cocoa powder

  • 1 tbsp monk fruit sweetener

  • ½ tsp vanilla extract

  • 1 tsp baking powder

  • 3 tbsp whole wheat flour

  • 1 tsp vegan chocolate chips

  • 2 tsp PB2 powder

Directions:

  • Mix all the ingredients until they are entirely smooth

  • Heat in mocrowave for 90 seconds

  • Top with a few more vegan chocolate chips and pb2 sauce (adds more calories)
