Pumpkin Oatmeal Bars
This yummy fall treat/breakfast/dessert has been taking over my house this October for sure. These Pumpkin oatmeal bars are not only tasty, but filling and healthy!
Ingredients: Makes 1 - 2 servings
2 cups of rolled oats
1 tsp baking powder
1 ripe banana
1.5 tsp pumpkin pie spice
1/2 tsp cinnamon
1/4 - 1/2 tsp sea salt
1 cup vanilla unsweet plant milk - If you don’t use vanilla - add 1 tsp vanilla extract to this recipe
1 cup canned pumpkin
2 TBSP pure maple syrup for the mix, and a little more for drizzling the finished product.
1 TBSP ground flax seeds
1 TBSP vegan chocolate chips - optional
Instructions: Stove Top
Add ripe banana to a large bowl and mash up well.
Add rolled oats and mix with the banana.
Add all other ingredients to the bowl and stir until well combined.
Take an 8” over safe dish and line it with parchment paper. If you have a non-stick dish, use that instead and skip the parchment paper.
Pour pumpkin oatmeal mix into the dish and spread out evenly
Place in the over preheated to 375 degrees and bake for 30 minutes, or until golden brown.
Serve your oatmeal bars and drizzle with maple syrup.
