Pumpkin Oatmeal Bars

This yummy fall treat/breakfast/dessert has been taking over my house this October for sure. These Pumpkin oatmeal bars are not only tasty, but filling and healthy!

Ingredients: Makes 1 - 2 servings

  • 2 cups of rolled oats

  • 1 tsp baking powder

  • 1 ripe banana

  • 1.5 tsp pumpkin pie spice

  • 1/2 tsp cinnamon

  • 1/4 - 1/2 tsp sea salt

  • 1 cup vanilla unsweet plant milk - If you don’t use vanilla - add 1 tsp vanilla extract to this recipe

  • 1 cup canned pumpkin

  • 2 TBSP pure maple syrup for the mix, and a little more for drizzling the finished product.

  • 1 TBSP ground flax seeds

  • 1 TBSP vegan chocolate chips - optional

Instructions: Stove Top

  • Add ripe banana to a large bowl and mash up well.

  • Add rolled oats and mix with the banana.

  • Add all other ingredients to the bowl and stir until well combined.

  • Take an 8” over safe dish and line it with parchment paper. If you have a non-stick dish, use that instead and skip the parchment paper.

  • Pour pumpkin oatmeal mix into the dish and spread out evenly

  • Place in the over preheated to 375 degrees and bake for 30 minutes, or until golden brown.

  • Serve your oatmeal bars and drizzle with maple syrup.
