Chocolate Chip Cherry Oatmeal
Okay you guys, I’ve said this before for other oatmeals, but this one is by far my favorite - at least right now! The flavors are so rich and decadent, and the little hits of chocolate and cherries with each bite and the way that all marries together in our mouth - wow! DELICIOUS! You have to try this recipe out for yourself.
Ingredients: Makes 1 serving
1 cup of oats. I use rolled oats for this recipe, but you can use oat groats, or steel cut oats. You will have to cook oat groats or steel cut oats longer.
1/2 cup - 1 cup unsweet vanilla plant milk. The amount you use just depends on how thick you like your oatmeal.
1 ripe banana, the riper the better
1 cap full or about 1/2 tsp of vanilla extract
1/2 - 1 cup of frozen cherries. You can use fresh cherries, but you need to make sure you remove the seeds and keep in mind, you wont have all that cherry juice in your bowl.
1 tbsp vegan chocolate chips, or less
1 tbsp ground flax seeds
Instructions
Combine oats and milk in a pot on the stove and cook until they are soft.
Lower the fire, mash in your banana, and stir until well combined.
Add in the vanilla and mix everything well one last time. Turn fire off.
If using frozen cherries, throw in a bowl and place in the microwave for about 1 minute, or until they are soft and no longer frozen.
Put your oatmeal in a bowl, and top with cherries, chocolate chips and flax seeds.
