Chickpea Chopped Salad

This salad is mind-blowingly delishious!  The key to an amazing salad (in my opinion) is having all the pieces the perfect bite size…including the lettuce!  The key “ingredient” here is the FULLSTAR chopper I use. This brand is key! I’ve had two other horrible ones, but this one’s on the money.  Click here to get the chopper.

Ingredients: Makes 1-2 Servings

  • Cucumber

  • Carrots

  • Tomato

  • Any lettuce

  • Rice (I use about 1 cup)

  • Chickpeas (I use about 1/2 cup)

  • Everything but the bagel seasoning

  • Low-sodium soy sauce

  • Tahini

  • Apple cider vinegar.

  • Nutritional yeast.

  • Sriracha

Directions:

  • Chopp all veggies with the chopper

  • Defrost or cook rice. I get frozen rice and keep it in my refrigerator always.

  • Make the dressing: Mix 2 tbsp low sodium soy sauce, 1-2 tbsp tahini, and a capful of apple cider vinegar. I also added a little sriracha and about 2 tbsp of nutritional yeast. Use water to thin out the dressing if it is too strong or thick.
