Chickpea Buffalo Casserole

Ingredients: Makes about 2-3 servings

  • 1 can of rinsed and drained chickpeas

  • 2 cups of veggie broth

  • 1/2 cup of vegan buffalo sauce.

    For oil-free, mix (1/2 c veggie broth, 1/2 c hemp seeds, and 1/2 cup Frank’s Redhot Original Cayenne Pepper Sauce)

  • 1/4 cup of nutritional yeast

  • 1 tsp onion powder

  • 1 cup of rice

  • Lots of cauliflower

  • Onion/Ranch Sauce (combine and blend a few small handfuls of cashews, silken tofu, and onion soup powder - this is a taste-as-you-go thing)

Directions:

  • Combine veggie broth, buffalo sauce, nutritional yeast and onion powder.

  • Heat on the stove until hot

  • Add chickpeas, rice and cauliflower to a 9 X 13 non stick pan.

  • Add the sauce

  • Bake for 60 mins at 400 degrees

  • Top with onion/ranch sauce and dig in!
