4 Bean Vegan Chili

I eat this chili at least a few times per week and I slather it on top of everything it seems. I also sometimes eat it alone, with rice, noodle, put it on top of my potatoes, etc. Oh and did I mention, the entire family loves it? Yum!

Ingredients: Makes about 8-10 servings

  • 4 cans of your favorite beans. Each can is intended to be a different type of bean.

  • 1 green bell pepper

  • 2 yellow onions

  • 1 cup of frozen corn

  • 1 6oz can of tomato paste

  • 1 8oz can of tomato sauce

  • 1 28oz can of diced tomatoes

  • 2 tbsp cumin

  • 2 tbsp chili powder

  • 1 tbsp agave nectar

  • salt and pepper to taste

    Instructions

  • saute chopped veggies in veggie broth until soft

  • add tomato sauce, paste, chopped tomatoes and spices. Stir well.

  • Add rinsed beans

  • Add agave

  • Salt and pepper to taste

  • Put heat on med-low checking and stirring frequently for 50 minutes.

Serve and enjoy!
