Zucchini & Tofu Bowl

Here’s another 10 minute or less recipe share where I show you how to make easy, healthy, and delicious meals that are going to allow you to spend less time in the kitchen and more time doing the things you love. Zucchini and Tofu have been a new combo I’ve been obsessing over. SO, I coupled it with some rice, spices, soy sauce, and tahini and oh my…it’s so good and sure to be a big crowd pleaser!

Ingredients: Makes 1 serving

  • Two zucchini, chopped

  • 1/4 block of tofu, diced

  • 1 c cooked rice (I used frozen to make things go super fast)

  • Low sodium soy sauce or tamari or coconut aminos, add the desired

    amount… I do about 2-3 tbsp

  • Garlic powder

  • Onion powder

  • Pinch of salt

  • Tahini, 1 tbsp

  • Veggie broth for sautéing

Instructions

  • Chop zucchini and tofu.

  • Add tofu and 1-2 tbsp of soy sauce to some Tupperware and shake around.

  • Add a little veggie broth, zucchini, tofu, rice, and spices to a pan and simmer for 10 minutes.

  • Add more soy sauce if desired.

  • Serve and drizzle with tahini!
