Thai Peanut Soba Noodle Bowl

Holy Moly, I love this meal! The flavors are amazing, its filling, nutritious and low fat. The entire meal takes about 5 minutes to make, depending on how you cook the broccoli, plus, your non-vegan friends and family are sure to enjoy this meal as well.

Ingredients: Makes 1-2 servings

  • Soba noodles. For this recipe, I use one bunch.

    Soba noodles typically come wrapped up into 3 or 4 little bundles. If yours aren’t in bundles, the equivilent of mine is 90G

  • Broccoli - I use an entire bag of frozen broccoli for this recipe

    Thai Peanut Dressing:

  • 5 tbsp PB2 Powder

  • 1 tsp red curry paste

  • 1/2 tsp garlic powder

  • 3 fresh basil leaves

  • Splash of unsweet plant milk (add more if needed)

Instructions

  • Boil water and throw soba noodles in and cook per instructions on the package (usually 4 minutes)

  • Defrost or cook broccoli until soft. I throw mine in my instant pot and it’s ready in three minutes

  • While the noodles and broccoli are cooking, mix your sauce. Add all the ingredients to a small blender. I use my magic bullet.

Once everything is done, plate your bowl, pour your sauce on top and voila!
