Oil Free and Vegan Spicy Kung Pao Noodles

This is one of my favorite new dishes. I LOVE to use the Spicy Kung Pao Noodles from Right Foods (use code: HUNRYVM for 15% off).

The Right Foods noodles and soups are super clean and use only the best vegan ingredient and no oil. However, if you want to make these on your own you can go to the store and buy a healthy version of ramen, and make your own sauce - mix together a little soy sauce, vinegar, chili paste and corn starch to thicken.

I will say though, there isn’t that much of a difference going with the Right Foods brand instead, plus it’s more convenient. Yes these containers have a little bit of sodium in there, but unless you are salt free, the sodium content is pretty similar to using a little bit of salt on your dish. These are kind of a no brainer.

Ingredients: Makes 1-2 servings

  • 2 containers of Right Foods Spicy Kung Pao noodles

  • 1 packet of seasoning (save the other packet to flavor another dish)

  • 2 TSP peanuts chopped

  • Bell Pepper strips

  • 1/2 of a lime

Instructions: Stove Top

  • Fill a pot with water, just enough to cover the noodles, and bring to a boil.

  • While your noodles are softening, sautee strips of bell peppers in veggie broth or water on the stove. Use as many peppers as you’d like.

  • Once boiling, throw the noodles in until they start to get soft.

  • Take a fork and break up the noodles (they come rolled up in a little ball, so we are just loosening them).

  • Drain most of the water. I leave a small amount in there because I like this less like a soup and more like a noodle dish.

    If you want this like a soup, drain until you like it, and then I would add the remaining flavor packet for more flavor.

  • Add the noodles to the peppers, or vice versa.

  • Give it a good stir and then plate.

  • Top with a small amount of chopped peanuts, squeeze with a little bit of lime and voila!

    Maximum Weight Loss Tip

    Use half of the cooked noodles and put them on top of lots of steamed broccoli. This will lower the calorie density of this dish, yet it will still filling your stomach with lots of volume keeping you full and satsified for hours!
