Low-Fat Peanut Rice Noodles
Ingredients: Makes 1 Serving
Thin rice noodles
One chopped red bell pepper
1 C chopped cucumber
1 C shredded carrots (buy already shredded if possible)
1/2 C shelled edamame (I buy frozen and defrosted)
1 C shredded red cabbage (even though it’s purple, lol)
Sauce/Dressing
1/4 c water
Juice from 1/2 lemon
2 tbsp maple syrup,
1 tbsp tahini,
1/3 c PB2 powder,
2 tbsp low sodium soy sauce
Instructions:
Mix ingredients for the sauce
Cook noodles according to the instructions
While the noodles are cooking, prepare the veggies
Put everything in a bowl and top it with sauce
