Buffalo Queso Chickpeas

Ingredients: Makes about 1 serving

  • 1 can of rinsed and drained chickpeas (I use about 1/2 cup)

  • 1 can string beans or green beans

  • 1 cup frozen rice or cooked rice

  • 3 tbsp of oil-free vegan queso. Healthy Vegan Mama cheese sauce is an excellent option!

  • Franks original hot sauce - as. much as you’d like. If you can’t find this, buffalo sauce works, but it may have a little oil. Go with the ones with avocado or olive oil.

Directions:

  • Warm the string beans, rice and chickpeas together

  • Top with queso and hot sauce

  • enjoy!
