Savory Oat Waffles

These 🧇are DELISH! I don't know about you, but I LOVE savory in the morning and I wanted to switch it up this time. Loaded with veggies and savory delisiousness, these waffles are sure to make for a satisfying and filling breakfast. Top it with some hot sauce and you're good to go 🙌

Ingredients: Makes four small waffles

  • 1 c rolled oats

  • 1/2-2/3 c low sodium veggie broth (you want the batter thick, similar to mashed potatoes)

  • 1.5 tsp baking powder

  • Large handful of chopped peppers. Any veggies you’d like

Instructions:

  • Blend everything EXCEPT peppers in a blender until smooth. Then add chopped peppers and pulse until mixed well.

  • Load your batter into a non-stick waffle maker and let sit until golden brown (check on them frequently and don't over-cook as I did - they were still delicious, though)
    The key to BIG and FLUFFY waffles (for me, at least) is to overstuff the waffle maker. You want the batter to be dropping from
    the sides as it cooks.
